Vegetable oils

Olive oil is a food oil extracted from olives, i.e. the fruit of the olive tree. The virgin type is obtained from the mechanical pressing of the olives.
Extra virgin olive oil is a natural product which, in order to be defined as such, must meet a series of fundamental chemical-physical and organoleptic requirements:
Be obtained directly from the pressing of the olives through exclusively mechanical processes (washing at room temperature, decantation, pressure, filtration) without the aid of chemical solvents or other industrial interventions, which do not alter the characteristics of the compounds present in the drupe (fruit).
Have an acidity of less than 0.8%.
The organoleptic examination, which is carried out by professional tasters, must detect the absence of defects and the presence on the palate of a set of olfactory and gustatory sensations that refer to the scent and flavor of the olive. This characteristic gives the oil the denomination of light, medium or intense fruity.

The sunflower oil extract is obtained from the refining of sunflowerseeds. It is bright in appearance and light in taste.
Sunflower oil is rich of polyunsaturated fatty acids, particularly linoleic acid, one of omega-6 essential fatty acids that are not processed by our body and, therefore, must be taken in via a balanced diet. Another peculiarity of this oil is its richness in Vitamin E and tocopherols, which are powerful antioxidants displaying a strong anti-aging action when the oil is used raw, as they are able to counterbalance the presence of harmful free radicals in our body.
Ideal for sautéing, frying, grilling and as an ingredient to prepare cakes for those who are lactose intolerant instead of using butter.

The light alternative to other cooking oils, rapeseed is a great choice. Best cold-pressed, the oil can then be used in salad dressings, or heated to fry or bake.
It's low in saturated fat, so has been hailed for its health benefits and also has other nutritional bonuses – it contains omegas 3, 6 and 9, which reduce cholesterol and help to maintain healthy joint, brain and heart functions. As it is high in mono-unsaturated fats, it is one of the only unblended oils that can be heated to a high frying temperature and not spoil its antioxidants, character, colour or flavour.
